Rainbow Bowl with a Garlic Spinach Sauce

The most versatile dish on my blog is right here. The rainbow bowl should really be called the "leftover veggies that I need to eat before they go bad" bowl. I take whatever veggies I have in the fridge, steam them, and put them over brown rice with some kind of sauce. 
For this bowl I used purple carrots, tomatoes, peppers, string beans, and cucumbers. 
The sauce is definitely what makes the dish. 
This sauce is amazing because it's creamy and garlicky and melts right into the rice. 
The Rainbow bowl is easy to assemble, but if you want the recipe for this amazing sauce, look below.

  • 4 oz firm tofu
  • 1 clove garlic 
  • 1 cup organic raw spinach
  • 1/2 cup organic raw arugula 
  • 1 stalk celery
  • 3 tbsp water (or more if you want to make the sauce thinner) 
  • salt and pepper to taste 
Put all of your ingredients into a blender and scrape down the sides in between pulses.
