3 Seed Quinoa Spelt Pancakes

I made The Everything Cookie (the most amazing 3 seed cookie) a while back. Those cookies inspired me to make these 3 Seed Quinoa Spelt Pancakes for breakfast this morning. 
These superfood pancakes will knock your socks off. They are soft and chewy, yet each little bite comes with a crunch from all of the different seeds. Not only are they delicious, but they are also packed with nutrition! 
Why are these pancakes so special?
They are:
  • packed with Omega-3 and Omega-6 oils
  • high in fiber
  • filled with protein to keep you full
 Ingredients (makes 10 pancakes):

  • 1/2 cup quinoa flour 
  • 1/2 cup spelt flour 
  • 1/2 cup old fashioned oats
  • 4 tbsp ground flax seeds 
  • 4 tbsp chia seeds 
  • 4 tbsp hemp seeds
  • 1 1/4 cup almond milk
  • 1/4 cup coconut nectar 
  • coconut oil spray 
  • maple syrup (to top the pancakes with) 
In a large bowl, combine all of your ingredients and stir until all of the seeds are well distributed. Place a frying pan over low heat and spray with coconut oil. Using an ice-cream scoop, scoop the batter out and spread the pancake batter into a circle. Let them cook on each side for 2 minutes. Serve with maple syrup and enjoy.
